The best guacamole in the world, guaranteed!

Although it´s a recipe originally from the Aztec country, in the Colombian culture you can´t miss the guacamole as an accompaniment in the barbacoa and in many preparations, if you want to give a special and unique touch to this dressing at home, this recipe is for you.


A recipe known to many, but personalized by LaChila and believe us, this touch will always leave you wanting more potatoes with guacamole.

I've never been a lover of cooking, but like many, that mindset changes as we become parents. By chance of fate my husband (barbecue fanatic because he loves the Argentine grill) He asked me to make him guacamole to accompany him with some delicious salty potatoes. Then in doing so I noticed that by adding the avocado to my guacamole, it was taking on a dark color, then remember that my grandmother to my chopped apples added her classic homemade pineapple vinegar and stopped oxidizing immediately, so take the first vinegar I find in my pantry (LaChila Rice Vinegar) and add a little bit, and don´t imagine what i achieved, praise from all the attendees because they had never taste (according to them) a guacamole as exquisite as that and all by chance... INGREDIENTS:


  • 1 ripe advocato

  • a dash of coriander (cilantro)

  • 1 ripe tomato

  • 1 Shallot

  • 1 lemon

  • LaChila Rice Vinegar

  • salt

  • Chili pepper (optional)

and so we prepare it!

In a bowl we put the ripe avocado and mash it with our pestle and mortar . In another bowl, we grate a tomato and half shallot. Mix. We add, a dash of finely chopped coriander, the juice of a lemon and salt to taste.Finally, add a splash of LaChila rice vinegar to the whole mix. For those who like spicy, simply add the chili pepper they have at home. And ready! You make your salty potatoes and you can't stop eating over and over and over ...
